COURSE OVERVIEW
The SIT40821 – Certificate IV in Asian Cookery is a nationally recognised qualification designed for cooks and chefs who wish to take on supervisory or team-leading roles in kitchens specialising in Asian cuisine. Graduates develop advanced cooking skills and comprehensive kitchen management capabilities, enabling them to operate independently or with minimal supervision, and to respond to non-routine challenges in a commercial kitchen.
The course covers a broad selection of Asian culinary techniques — from appetisers and snacks, through stocks, soups and sauces, to rice, noodles, salads, main dishes and full cooked meals. Alongside cooking, students learn menu and recipe planning, cost control, kitchen operations management (including stock, inventory and workflow), workplace health and safety, food hygiene, and staff supervision.
By the end of the program, graduates will be equipped to lead sections of a kitchen, coordinate food production, manage staff or work as senior cooks in restaurants, cafes, hotels or other hospitality venues that serve Asian food.

This qualification reflects the role of chefs and cooks who have a supervisory or team leading role in kitchens preparing Asian food. They operate independently or with limited guidance from others and use discretion to solve non-routine problems.
This qualification provides a pathway to work in organisations where Asian food is prepared and served, including restaurants, hotels, clubs, pubs, and cafés.

No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.
Work Placement
Everest Institute will organize Work Placement after consultations and formal agreements with individual students and relevant organizations.
You may also need to obtain evidence of a Police Check to ensure participation in Fieldwork Placement.
