COURSE OVERVIEW
The SIT31121 – Certificate III in Asian Cookery is a nationally recognised qualification that prepares students for work as cooks specialising in Asian cuisine. This qualification reflects the role of individuals who use a wide variety of well-developed cooking skills and a solid understanding of kitchen operations to produce Asian dishes and menu items in a commercial food environment.
Students build practical competence in preparing Asian-style food — including appetisers, snacks, soups, stocks, sauces, rice and noodle dishes, and other cooked meals. Alongside cooking techniques, the course emphasises safe food handling, hygiene, proper use of kitchen equipment, recipe planning and costing, stock management, workplace safety, and general kitchen operations. Graduates are expected to work with some independence and judgment, guided by standard procedures and workplace plans.
This qualification provides a pathway for cooks to work in venues where Asian food is prepared and served, including restaurants, cafés, hotels, pubs, clubs and similar hospitality settings.

COURSE DETAILS
This qualification reflects the role of cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare Asian food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.
This qualification provides a pathway to work as a cook in organisations where Asian food is prepared and served, including restaurants, hotels, clubs, pubs and cafés.
The skills in this qualification must be applied in accordance with Commonwealth and State or Territory legislation, Australian standards and industry codes of practice.
Work Placement
Everest Institute will organize Work Placement after consultations and formal agreements with individual students and relevant organizations.
You may also need to obtain evidence of a Police Check to ensure participation in Fieldwork Placement.
Course Units
To achieve this qualification, students must complete 24 units, comprising of:
